When Ottoman cuisine is mentioned, culinary art, food culture, table richness and food variety come to mind. Since the Fatih era, when Topkapi Palace was built, meals were cooked in kitchens called Matbah-ı Amire. There were units such as Has Kitchen, Ağalar Cuisine, Divan Cuisine, Helvahane, Pantry and Kalayhane affiliated to Matbah-ı Amire. In the Ottoman Empire, various tools were used according to the palace eating and drinking culture.
In Ottoman cuisine, soup has a very important place in the nutrition of the people and the palace. By the 15th century, more than forty types of soup were being made in the palace kitchen. Sometimes meat was added to the soup made with grains and legumes, and meals were spent with thick soups prepared in this way. Soup has gained a symbolic value for the army, all expenses of which were covered by the Ottoman Empire. The fact that the Janissaries did not drink the soup and raised the cauldron was a sign of their revolt. Losing the soup cauldron to the enemy on the battlefield was also a great shame for the Janissaries.
